New way for madeleine cakes

Do you know this small traditional sponge cake with a shell shape that we call madeleine ? It has a pleasant story.

One day around 1755, just before serving a meal to Duke Stanislas, the pastry cook left the place. It was absolutely inconceivable not to have a dessert for the duke of Lorraine. In the end a new cake was brought to the table. The duke liked it a lot and was so happy with it that he asked to meet the person who made this wonder. She was a servant.

- How do you call this cake ?

- It hasn't got any name. We make it at home in Commercy for celebrations.

- And what's your name ?

- Madeleine.

- So this cake will be called Madeleine de Commercy.

Nowadays people are often looking for something new. The "new" madeleines are coated with chocolate and served as lollipops with a wood stick.

I haven't tasted them yet. It may be funny and unusual to me. But I am sure I will prefer the "classic" madeleine with my cup of coffee.
